I came up with this recipe a couple of weeks back while I was driving to the bank as I was trying to think of something to bring to a neighborhood get-together. I knew we had chicken, I knew we had cream cheese and I knew we had a can of chiles. When I got home I started mixing things together and this is what I ended up with.
For the chicken, to make it easy, I would suggest one of those roasted ones that the grocery stores carry in the deli. Its super easy to separate the chicken and chop it up so there is no need to make it yourself. Also, this recipe scales well, so if you are making it for a few friends for dinner, the below recipe will be fine. But if you are bringing it to a party, I would suggest doubling it.
8 ounces cream cheese, softened
8 ounces pepper jack cheese, shredded
8 ounces chicken, chopped
4 ounce can green chiles
4 green onions, sliced
1/2 cup sour cream
1/2 bunch cilantro (about 1/4 cup packed)
3 cloves garlic
1/2 teaspoon black pepper
1/2 teaspoon salt
Place everything in a big bowl and mix thoroughly.
If serving immediately, bake at 350 for 30 to 45 minutes in a casserole dish.
Otherwise, make ahead and store in the fridge. Bake at 350 for an hour.
Serve with tortilla chips.
